Aged for 38 years in 100 year old cedarwood barrels, this is a very rare and exceptional soy sauce. Made by Kamebishi, a manufacturer steeped in tradition, this artisanal soy sauce was produced using the same techniques as when the business began in 1753. It is only available in very limited numbers.
Owned and run by the Okada family and operating from the same Samurai house where the business began in 1753, Kamebishi is a company steeped in tradition. The flavour and balance of this Japanese premium soy sauce rely on the exact replication of a 250-year-old traditional Japanese method.
Strict selection of the finest soybeans and meticulous attention to detail during production result in an exceptional flavour.
The extended ageing period delivers notes of wood and cocoa with a rich umami flavour that is floral and fruity with a hint of aged balsamic vinegar.
A traditional Japanese soy sauce by Kamebishi will only contain four ingredients: roasted wheat, soybeans, water and salt, without any additives. Barrel aged soy sauce in particular has a rich umami flavour and depth thanks to the barrel ageing process.
Delicious sampled on its own, it also combines well with sashimi of scallops and turbot; dark chocolate desserts and ripe slices of mango or pineapple.
